This delicious tomato mozzarella salad is my ultimate summer go to salad. I call it my signature salad, because I keep going back to it time and time again. You can have it as a side, or bring it along if you’re invited to a BBQ. It’s refreshing, tasty and a family favourite.
Here’s what you need for the salad:
2 balls of mozzarella
1 packet of vine tomatoes
1 packet of fresh basil
a sharp kitchen knife and a chopping board
For the dressing:
2 tbsp of a good quality olive oil
a pinch of salt
Pepper to taste
sprinkle of oregano
sprinkle of balsamic vinegar (optional)
Finely slice the mozzarella and put to one side.
Then thinly slice up the tomatoes. My trick is to place the tomato sideways with the top and bottom of the tomato facing left and right ( not up). This will prevent the insides from squirting everywhere. And you’ll have one sexy sliced tomato.
Pick off the basil leaves and give them quick rinse.
On a flat plate, start layering 1 slice of mozzarella, and then 1 or 2 slices of tomato followed by basil.
If you love basil as much as I do, go crazy and have a basil layer after tomato and then again after the mozzarella. The sky is your limit.
Season with salt and pepper and generously drizzle some olive oil over the salad. Sprinkle the oregano all over and add a sprinkle of balsamic vinegar.
